Irish Tomato Relish

Ingredients

  • 200g (7 oz) Plain flour
  • 1 tbsp Olive oil
  • 1 small Grated onion
  • 2 cloves Crushed garlic
  • 2 Grated carrots
  • 1 small Grated summer squash
  • 1 small Grated Courgette
  • 100g (4 oz) Porridge oats
  • 30g (1 oz) Grated Cheddar cheese
  • 1 Beaten egg
  • 3 tablespoons (45g) Folláin No Added Sugar/Salt Irish Tomato Relish
  • 1 tablespoon Soy sauce
  • ½ teaspoon Mixed Herbs
  • Pinch Black pepper
  • To serve Burger buns

Method

  1. Heat the olive oil in a frying pan over low heat, and cook the onion and garlic for about 5 minutes, until tender.
  2. Mix in the carrots, butternut squash and courgette.
  3. Continue to cook and stir for 2 minutes.
  4. Remove pan from heat, and mix in oats, cheese, mixed herbs, seasoning, and egg.
  5. Stir in soy sauce.
  6. Transfer the mixture to a bowl, and refrigerate for 1 hour.
  7. Place the flour on a large plate.
  8. Form the vegetable mixture into eight round patties.
  9. Drop each patty into the flour, lightly coating both sides.
  10. Grill or pan-fry patties for 5 minutes on each side, or until heated through and nicely browned.
  11. Place in a burger bun with a Folláin No added sugar Irish tomato Relish or Folláin chargrilled red pepper relish or Folláin caramelised red onion relish with black garlic.
  12. Serve with rice or salad
