200g (7 oz) Plain flour1 tbsp Olive oil1 small Grated onion2 cloves Crushed garlic2 Grated carrots1 small Grated summer squash1 small Grated Courgette100g (4 oz) Porridge oats30g (1 oz) Grated Cheddar cheese1 Beaten egg3 tablespoons (45g) Folláin No Added Sugar/Salt Irish Tomato Relish1 tablespoon Soy sauce½ teaspoon Mixed HerbsPinch Black pepperTo serve Burger buns

- Heat the olive oil in a frying pan over low heat, and cook the onion and garlic for about 5 minutes, until tender.
- Mix in the carrots, butternut squash and courgette.
- Continue to cook and stir for 2 minutes.
- Remove pan from heat, and mix in oats, cheese, mixed herbs, seasoning, and egg.
- Stir in soy sauce.
- Transfer the mixture to a bowl, and refrigerate for 1 hour.
- Place the flour on a large plate.
- Form the vegetable mixture into eight round patties.
- Drop each patty into the flour, lightly coating both sides.
- Grill or pan-fry patties for 5 minutes on each side, or until heated through and nicely browned.
- Place in a burger bun with a Folláin No added sugar Irish tomato Relish or Folláin chargrilled red pepper relish or Folláin caramelised red onion relish with black garlic.
- Serve with rice or salad
