The Perfect Baked Potato

4 large potatoes (we recommend Roosters), in uniform size for the best outcome. Golden Wonders or Kerrs Pinks work well too. 4 tbl sp Butter or olive oil.To taste Sea salt flakes To taste Freshly-ground black pepper.

- Heat oven to 200°C/gas mark 5. The oven needs to be extra hot, so that the potato skins will crisp up quickly
- Place a wire cooling rack on a baking sheet, this ensures your potatoes cook evenly on all sides
- Using a fork, poke holes all over each potato
- Bake for about 25 minutes
- Take the potatoes out of the oven, and brush each potato with melted butter (or oil)
- Sprinkle the potato with sea salt
- Place the potato back on the baking sheet/wire rack, opposite side up, so that the potato can cook evenly on both sides
- Second bake for an additional 20 minutes, on average, they typically take 45-55 minutes to cook.
- Finally, slice the potato open lengthwise with a paring knife, give it a good squeeze to open it up, fluff the insides with a fork
