Caramelised Onion with Black Garlic Relish

Ingredients

  • 1 pack (approx 320g) Shop bought ready rolled puff pastry
  • 1 of each Red and yellow bell peppers sliced thinly⁠
  • 1 Red onions sliced⁠
  • 1 Round goats cheese log ⁠
  • Bunch Fresh Basil⁠
  • 1 jar Our Caramelised Red Onion Relish with Black Garlic⁠

Method

  1. Cut pastry into 12 cm squares.⁠
  2. Toss peppers and onions in oil. ⁠
  3. Place in centre of pastry 3 cms from edge, cook blind for 10 mins at high heat, then add the goats cheese to centre on top of vegetables. ⁠
  4. Put back in oven for 6 mins or until pastry nicely browned and goats cheese cooked but not too runny (grill can work for this as well).⁠
  5. Remove and place on wire tray to cool. Add dollops of our Caramelised Red Onion Relish with Black Garlic and the fresh basil leaves. ⁠
