Roast Pork with Raspberry Jam Sauce

300g Piece of pork steak or tenderloin1 tbps Olive oilPinch SaltPinch PepperHalf Lemon4 tbsp Raspberry Sauce2 tbsp Orange juice2 tbsp Balsamic vinegarTo serve Roast vegetables

- Pre-heat the oven to 200C/180C/Gas Mark 6.
- Put the pork steak or tenderloin into a baking dish and rub with a few tablespoons of olive oil.
- Season well with salt and pepper.
- Sprinkle with about a tablespoon of dried mint and top with the zest of the lemon half.
- Roast for about 30 to 40 minutes, until cooked through.
- You can roast your preferred vegetables in the same roasting dish as the pork at the same time.
- Once cooked, allow the pork to rest for 10 minutes before cutting it.
- Meanwhile, put the raspberry jam, orange juice and balsamic vinegar in a small saucepan.
- Simmer over medium heat until the jam has melted, about five minutes.
- Serve your pork in slices alongside the roast vegetables drizzled generously with the raspberry sauce.
