Quick Brown Soda Bread
So simple to make and so wholesome, get into the habit of baking your own bread, because it’s unbeatable served with Folláin Jam and butter.

225g (½ lb) Macroom Extra Course Brown Flour225g (½ lb) White flour1 tsp Salt1 tsp Bread soda2 tbsp Sunflower cooking oil280ml (½ pint) Buttermilk or sour milk

- Preheat the oven to 190ºC/375ºF/gas mark 5.
- Sift the plain flour, salt and baking powder in a bowl, add the Macroom Extra Coarse Brown Flour and dark brown sugar and mix well.
- Make a well in the centre and add the oil and buttermilk.
- Mix very well and pour the mixture into a greased (5 ½ x 10 ½ in) loaf tin.
- Bake in the preheated oven for approx. 45 minutes. For a softer crust cool on a wire tray and cover with a damp tea towel.
- Serve with butter and Folláin Jam or Marmalade, or with cheese and Folláin Relish.
- Substitute 55g (2 oz) margarine or butter for the cooking oil in the above recipe, rubbing it into the dry ingredients before adding in the buttermilk.
- After adding the buttermilk, turn the mixture onto a floured surface and knead lightly, shape it into a round about 2 inches deep and then place it on a baking sheet.
- Bake in a preheated oven 190ºC/375ºF/gas mark 5 for 40 – 45 minutes.
- To make your brown bread extra nutritious, add a handful (or two) of mixed seeds, i.e. pumpkin seeds, sunflower seeds, linseed etc., after adding in the buttermilk, and mix well, also top the brown bread with a sprinkling of seeds just before you put it in the oven.
