Pancakes with Folláin Jam

Pancakes are just the thing for a breakfast treat on a lazy Sunday morning.

You can always prepare the pancakes in advance, if you’re not really a morning person! Serve with your choice of jams or marmalades.

Ingredients

  • 110g Plain flour
  • 2 Eggs
  • 280ml Milk
  • Pinch Salt
  • 2 tbsp Melted butter
  • 1 tbsp Vegetable oil

Method

  1. Sieve the flour and salt together in a bowl.
  2. Make a well in the centre and add the eggs.
  3. Gradually whisk in the milk until you get a smooth batter with the consistency of cream.
  4. Leave the batter to rest for about half an hour if possible, and then stir in the melted butter.
  5. Heat a little vegetable oil in a non-stick frying pan and drop in one large tablespoon of the batter.
  6. Cook for 1 – 2 minutes on one side before turning over.
  7. Flip over gently and cook until golden on the other side.
  8. Serve the hot pancakes with your favourite Folláin Jam.
