Orange Marmalade medium cut - traditional recipe

75ml Whiskey Juice of 1 Lemon 1 Egg White1tbsp Follain Orange Marmalade4 drops Angostura Bitters35ml

- Place the Folláin Orange Marmalade in a small non-stick saucepan over a medium heat and pour in the water.
- Stir and bring to the boil. Handle very carefully.
- Once the marmalade has dissolved, take the pan off the heat and leave to cool.
- Pour 15ml/1 tablespoon of the cooled marmalade syrup into a cocktail shaker with the whiskey, lemon juice, egg white and bitters.
- First, ‘dry shake’ the mixture (without any ice) vigorously for 8-10 seconds.
- Then fill the cocktail shaker with ice and shake again for the same amount of time for smooth texture.
- Strain the whiskey sour into a rocks glass using a strainer and a fine mesh strainer or regular kitchen sieve.
