Folláin Raspberry Tart
A quick and easy to prepare tart, the perfect end to a lovely summer meal.

175g (6 oz) Plain flour50g (2 oz) Icing sugar125g (4 oz) Butter at room temperature225g (8 oz) Fresh raspberries225g Folláin Raspberry Jam

- Preheat the oven to 190ºC/375ºF/gas mark 5.
- Sieve the flour, icing sugar into a mixing bowl.
- Add the butter and beat until the mixture comes together or resembles fine breadcrumbs.
- Press evenly into a greased pie dish (or individual pie dishes) and bake for about 10 minutes or until pale brown in colour.
- Remove from the oven and allow to cool.
- Arrange raspberries on the cooled base.
- Place the Folláin Raspberry Jam in a small sauce, over low heat until it begins to boil.
- Spoon the hot Folláin Traditional or nothing but fruit Raspberry Jam over the fruit.
- Cover and refrigerate for about an hour before serving.
- Serve with whipped cream or ice cream.
