Blackberry Yoghurt Bark

This gorgeous blackberry yoghurt bark almost looks too good to eat!⁠ It’s a nice one to prep ahead and have ready for quick, tasty and seasonal snacks!⁠

Ingredients

  • 500g yoghurt, low-fat Greek, coconut, soya or thick kefir⁠
  • 150g of fresh blackberries⁠
  • 30g roasted hazelnuts⁠
  • 1 tbsp of Folláin Traditional Blackberry Jam⁠

Method

  1. Line a large baking tray with greaseproof paper and spread the yoghurt over the paper in an even layer.⁠
  2. Add the blackberries, hazelnuts and swirl through the spoon of Folláin Blackberry Jam, distributing the elements evenly over the yoghurt. ⁠
  3. Freeze for 2 hours or until solid.
  4. Carefully peel away the paper, then break the yoghurt into shards and place in a freezer bag. ⁠
  5. Seal and keep frozen for up to 3 months
