Coolea Cheese Omelette with Relish

2 Free Range Eggs1 tbsp Water30g/50g Coolea Cheese (grated)To taste Salt and PepperKnob Butter1 Diced tomatoHandful Chopped chives (optional)2 tbsp Your favourite Folláin Relish

- Beat eggs together with salt (if using) and pepper and water.
- Melt the butter in a heavy-based frying pan.
- Add eggs to the pan and turn down the heat.
- Using the back of a fork, stir the mixture, dragging the cooked egg from the edges of the pan into the centre to ensure an evenly cooked omelette.
- Place the grated cheese and diced tomato in the middle, top with 2 teaspoons of Folláin Caramelised red onion relish with black garlic or with Folláin chargrilled red pepper relish, fold over the omelette and serve immediately with some extra relish on the side.
